Thin Mint Muddy Buddies

These thin mint muddy buddies are a twist on the original. The mint effect is doubled up with the addition of Andes mints and Girl Scout thin mint cookies. The first stage is admitting it. Unfortunately I have also accepted the fact that I will always be addicted! What is it with these that are so delicious? I even had to get a bag on our most recent road trip. They weren’t the same as a fresh batch made at home, but they still were great! Someone told me a few weeks back when I posted the last muddy buddy recipe that I should make a mint kind. I gladly took on the challenge. Holy yum! I loved the mint flavor in these! And the tiny thin mint cookies that coated the outside made them extra amazing! So fun for St Patricks Day, girl scout season, or really any time of the year!

Ingredients

Mint Chocolate Puppy Chow

  • 3/4 cups finely crushed thin mint cookies
  • 2 tablespoons chopped creme de menthe candy, such as Andes® mints
  • 1 1/2 cups semisweet chocolate chips
  • 1/4 cup unsalted butter
  • 1/4 teaspoon mint extract
  • 6 cups crispy cereal squares, such as Chex™ cereal

Directions

Step 1

Place thin mint cookies in the jar of a blender or food processor, and blend cookies to yield 3/4 cup. Crush Andes mints; set aside. 

Step 2 

Add semisweet chocolate chips, butter, and mint extract to a microwave-safe bowl. Microwave for 1 minute, and stir. Continue to microwave at 15 second intervals, stirring well each time. Continue the process until mixture is smooth.

Step 3 

Add cereal to a large bowl. Pour melted mint chocolate over cereal and stir to coat thoroughly. Add coated cereal to a large resealable bag. Pour in confectioner’s sugar and crushed thin mint cookies. Shake it all together until cereal is evenly coated in the mixture. 

Step 4

Pour cereal mixture out onto a baking pan; sprinkle chopped Andes mints over the top. Once mixture is cooled and set, transfer to an airtight container.
